Our Honeymoon In....

St. Lucia


Originally when we were planning out Honeymoon we planned on going to Antigua, 
after some careful consideration we decided to go even further south & head to the beautiful Island of St. Lucia
We were there for 7 days and 6 nights. Monday to Monday. 
We flew out of Boston, as it ended up being a couple hundred dollars cheaper flying from there!!
We left at about 5am and landed in St. Lucia at 1:30pm. 
This was my first time out of the Country excluding Canada which I really don't count because it was so close to where I went to college. 
Their airport was TINY. 
One floor, and when you first walk in you literally are in customs!
They even have a whole entire room dedicated for sandals cuntomers, since that is pretty much all who comes. 
When you get past customs there are a TON of men in red hats asking to help you with your bags. 
If you ever go, DON'T LET THEM take your bags. 
They will literally walk it 25 feet down the hallway and drop it off and expect a tip!!
hahahah!!
Fast Forward to our Resort.
St. Lucia Regency La Toc Golf & Spa
We ended up in our hotel room and I was UNHAPPY. 
Our air conditioner was super loud and hardly cooled, our shower was dirty and the curtain was half pulled down and we were right by the pool.
So I did what I do best. 
Complain and become very assertive, and thankfully got upgraded to an even better room for free overlooking the ocean!!

We did everything we could, snorkeling, kayaking, beach volleyball, paddle boarding, hobby catting, headed to the other resorts, went to EVERY restaurant, had a candle lit dinner in a gazebo over a waterfall and laid out and got some suuuun!!

First day there, quick stop off the shuttle that drove us from the airport to the resort, they have no speed limits or really rules of the road at all.

I had the best time of my life on my honeymoon, it was sooo perfect, weather, food, temperature. 
PERFECT
On our last day we had to leave at around 11am to head back to the airport. 
It DOWNPOURED. 
I felt like it was preparing us for coming back to NY where it was SNOWING!! hahaha

This is my last wedding related post & I am somewhat sad!!

Buffalo Chicken Bake- Amazing Easy Dinner!

Pinterest, you are one of my favorite things in the world. 
I am actually unsure how I previously lived without you. 
Since you have been in my life, I have been so much more creative & a much better cook!!

One particular recipe I found on Pinterest is the Buffalo Chicken Bake:

So easy & soooo yummy!!!

Ingredients: 
  • 1 1/4lb boneless skinless chicken breasts, cut into 1-inch strips
  • 1/3cup buffalo wing sauce (More depending on how hot you like things)
  • 6cups frozen (thawed) southern-style hash brown potatoes (we bought any hash browns we could find)
  • 1cup ranch or blue cheese dressing
  • 1/2cup shredded Cheddar cheese (2 oz)
  • 1can (10 oz) condensed cream of celery soup
  • 1/2cup corn flake crumbs
  • 2tablespoons butter or margarine, melted
  • 1/4cup chopped green onions (3 to 4 medium) 
  
Directions: 
  • 1 Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • 2 In medium bowl, stir together chicken strips and wing sauce.
  • 3 In large bowl, stir together potatoes, dressing, cheese and soup. Spoon into baking dish. Place chicken strips in single layer over potato mixture.
  • 4 In small bowl, stir together crumbs and butter. Sprinkle in baking dish.
  • 5 Cover with foil. Bake 30 minutes; uncover and bake 20 to 25 minutes longer or until potatoes are tender and juice of chicken is no longer pink when centers of thickest pieces are cut. Sprinkle with green onions.

  Sooo sooo soooo good & hubby loved it! 
I tend to not like left overs that much & I am on the 2nd day of leftovers for it and just find it still soooo yummy and can't wait to eat it for lunch again tomorrow!!

From Miss to Mrs: Part 6:The Reception!


I probably keep saying this, but our reception was my FAVORITE part of our wedding. 
Maybe, the reception is everyone's favorite, but I seriously had SO much fun!
It flewww by and that makes me so sad, but looking back AHHH, Love!!!
We had an amazing ceremony, at a somewhat neutral location to my husband and I.

The whole day/ night was perfect, amazing, fairy tale esque if you will. 
Not a single thing went wrong. 
And if it did, it did not matter. 
My biggest piece of advice for all you bride to be's would be relax. 
Everything will work out PERFECTLY!
And even if it doesn't, you will be way to busy, way to in love, way to happy to notice!
I want to go back a million times again and do it all over. 

I hope you all enjoyed re-living my wedding with me. I know I sure did.
